Distillation is the process by which alcohol is extracted from a fermented liquid by boiling it in a still, capturing the resulting vapors and cooling them to convert them back into a liquid. While many expensive brands feel that three times through the still is plenty, we’ve found that four cycles yields a spirit of optimal purity, neutrality and character.
